Bio:

In May 2025, Erin Mitchell joined Methodist University as Senior Accountant, working with the Methodist University Cape Fear Valley Health School of Medicine. Erin earned her undergraduate degree in exercise sports science with a concentration in health and wellness from Meredith College and master’s degree in business administration with a concentration in organizational leadership from Southern New Hampshire University. She also holds multiple professional certificates from the American Institute of Certified Public Accountants. A proud native North Carolinian, Mitchell was born and raised in Snow Hill, N.C. She and her wife are the grateful parents of four amazing humans and one spoiled Doberman named Red.
